Sausage and Egg Breakfast Burritos
Ingredients:
- 1/2 lbs sausage
- 2 Tbsp chopped onion
- 6 large eggs
- 1 - 4 oz. can diced green chiles
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- 3/4 cup salsa
Preparation:
In a large skillet over medium heat brown sausage with onion until no longer pink. Drain and set aside, leaving mixture in skillet.
In a medium bowl beat together eggs and chiles. Add to sausage mixture; cook over medium heat, stirring occasionally, until eggs are set. Add cheese, mixing well to melt.
Warm flour tortillas according to package directions. Spoon 1/2 cup egg mixture onto center of each warmed tortilla. Garnish with additional cheese and salsa, if desired. Fold half of tortilla over filling; fold sides toward center, leaving top open. Serve immediately.
