Red Earth Cake
Cake Ingredients:
- 1 1/2 cup sugar
- 1/2 cup shortening
- 2 well-beaten eggs
- 2 cup minus 2 Tbsp flour
- 1/4 tsp salt
- 1 tsp soda
- 1 cup buttermilk
- 1 tsp vanilla
- 4 Tbsp cocoa
- 1 tsp McCormick red food coloring
- 2 Tbsp brewed coffee
Icing Ingredients:
- 1 (16.oz.) box powdered sugar
- 4 Tbsp cocoa
- 4 Tbsp brewed coffee
- 1 tsp vanilla
- McCormick red food coloring
- 1/4 lbs butter, softened
Preparation:
Cake: Cream sugar and shortening; add well-beaten eggs. Then add flour in which has been added salt and soda. Add milk and vanilla. Make a paste of cocoa, food coloring, and coffee; add to batter.
Bake in 2 prepared round cake pans at 350° F or 25 minutes. Icing: Mix all ingredients together until smooth. Spread on cooled cake.
