Black Bean Casserole Ole
Ingredients:
- 1 cup chopped onions
- 3/4 cup yellow cornmeal
- 2 tsp chili powder
- 1 cup evaporated skim milk
- 1/4 cup water
- 1 - 16 oz. can whole kernel corn, drained
- 1 - 16 oz. can black beans, drained and rinsed
- 1 - 16 oz. can stewed tomatoes
- 1 - 4 oz. can diced mild green chiles
Preparation:
Preheat oven to 350° F. Lightly spray an 8-inch square baking pan with non-stick spray.
In a large bowl, combine all ingredients. Mix well. Place in prepared pan. Bake uncovered for 45 minutes.
