Banana Split Cheesecake
Crust & Filling Ingredients:
- 2 cup Graham Cracker Crumbs
- 1 tsp Vanilla
- 1/3 cup Butter or Margarine, melted
- 3 Eggs
- 3 - 8 oz. Cream Cheese, softened
- 1/2 cup Mashed Ripe Bananas (just starting to spot)
- 3/4 cup Sugar (for filling)
- 1/4 cup Sugar (for crust)
Topping Ingredients:
- 1 cup Halved Strawberries
- 1 - 8 oz. Can Crushed Pineapple, drained
- 1 tsp Lemon Juice
- 1 Banana, sliced and tossed with lemon
- juice
Preparation:
Preheat over to 350 degrees. Mix graham cracker crumbs, butter and 1/4 cup sugar. Press into bottom of 9 x 13 baking pan. Mix softened cream cheese, 3/4 cup sugar, vanilla and mashed bananas; pour over graham cracker crust. Bake 30 mins or until center is almost set, test with a toothpick.
Remove from oven and cool. Once cooled, chill for 3 hrs or overnight. Cut into squares and top with strawberries.
