African Chicken Livers
Ingredients:
- 2 Tbsp oil
- 1 largeg Onion; chopped
- 2 cloves garlic; chopped
- 1 tsp fresh ginger; grated
- 1 lbs chicken livers; cut in bite sized pieces
- 1 Tbsp flour
- 2 Tbsp roasted peanuts; ground
- 1 large tomato; peeled & chopped
- 3/4 tsp basil
- 1 cup chicken stock or water
- 1 tsp ground coriander
- 1 tsp salt
- 1 tsp fresh chili; chopped
- black pepper
- 8 oz spaghettini; cooked
- 2 hard boiled eggs; quartered
Preparation:
Sauté onion, garlic & ginger until lightly browned. Add liver & cook 2 minutes. Sprinkle with flour, cook until slightly browned. Stir in peanuts and cook another 2 minutes.
Add tomato & basil; sauté 2 minutes. Stir in stock, coriander, salt, chili & pepper. Simmer, covered, 5 minutes.
Arrange pasta on heated platter & top with liver mixture. Garnish with eggs and serve.
