Apricot-Onion Chicken

Ingredients:

  • 1 cup apricot preserves
  • 1 (8 oz.) bottle Catalina salad dressing
  • 1 (1 oz.) package onion soup mix
  • 6 to 8 chicken breast halves

Preparation:

Combine apricot preserves, dressing and soup mix. Place chicken breasts in a large, buttered baking dish and pour apricot mixture over chicken. Bake uncovered at 325° for 1 hour and 20 minutes. Serve over hot rice.

For a change of pace, use Russian dressing instead of Catalina.
