Chicken Chili
Ingredients:
- 3 cans - 16 oz. Great Northern White Beans
- 4 cup chopped cooked chicken
- 1 Tbsp olive oil
- 2 med. onions, chopped
- 4 cloves garlic, minced
- 8 oz. can green chilies, chopped
- 2 Tbsp cumin
- 1 1/2 Tbsp oregano
- 1/4 Tbsp cayenne pepper
- 6 cup chicken brother
- 12. oz. Monterey Jack cheese, shredded
Preparation:
Heat oil over med.-high heat. Sauté' onions til translucenTbsp Stir in garlic, chilies, cumin, oregano and cayenne pepper. Sauté' 2 minutes. Add beans and broth. Bring to boil. Reduce heat and simmer until beans are tender.
About 2 hours. Stir occassionally. Add chicken and cheese. Stir until cheese melts. Season with salt/pepper to taste.
