Santa Fe Chicken Chili
Ingredients:
- 1 Tbsp olive oil
- 3 Tbsp minced onions
- 1/2 tsp minced garlic
- 15 oz. great northern beans, rinsed & drained
- 15 oz. kidney beans, undrained
- 5 oz. chunk white chicken in water, drained
- 4.5 oz. green chilis, chopped
- 1 cup chicken broth
- 1/2 tsp chili powder
- 1/2 tsp cumin
Preparation:
Sauté the onions and garlic over medium heat in the oil for three to four minutes. Stir in the rest of the ingredients and bring to a boil. Reduce the heat and simmer for ten minutes or until slightly thickened and hot. Serve topped with sour cream.
