Little Chinese Almond Cookies
Ingredients:
- 1 cup self-rising flour
- 1/4 cup shortening
- 1/4 cup margarine
- Pinch of salt
- 1/4 cup plus 2 Tbsp sugar
- 1/2 tsp almond extract
- 1 egg yolk
- 1 Tbsp water
- 1/4 blanched almonds
Preparation:
Place flour in bowl. Cut in shortening and margarine finely. Use hands to work in salt, sugar, and extract. Shape into long roll, 1 inch in diameter, and wrap in waxed paper. Chill about 1 hour. Cut roll into 1/4 inch slices.
Place 1 inch apart on lightly greased baking sheet. Brush each slice with mixture of egg yolk and water. Press an almond on top of each. Bake at 400° F for 8-10 minutes or until lightly golden brown.
