Angel Eggs
Ingredients:
- 6 hard-boiled eggs
- 3 medium potatoes, peeled and boiled
- 1/2 cup fat-free mayonnaise
- 1 tsp dry mustard
- 1 tsp Dijon mustard
- 1 tsp sweet pickle juice
- paprika for garnish
Preparation:
Peel and boil potatoes, mash to a fine consistency. When potatoes are cool, add fat-free mayonnaise, dry mustard, Dijon mustard and sweet pickle juice. Set aside. Peel boiled eggs and cut in half; discard egg yolks. Spoon potato mixture into each egg; sprinkle with paprika.
