B and B Relish
Ingredients:
- 13 lbs Green tomatoes; cut in-chunks
- 7-1/2 lbs Onions; chopped
- 3-1/4 lbs Green and red bell peppers;-chopped
- 6 Hot peppers (optional)
- 2-1/2 Tbsp Salt
- 6 cup Sugar
- 1-1/4 tsp Black pepper (optional)
- 2 tsp Mixed pickling spice; tied-in a cheesecloth bag
- 7 cup Vinegar
Preparation:
Put all ingredients in a large kettle. Stir well. Boil 15 minutes. Remove spice bag. Put in hot, sterile jars. Seal.
NOTE: For mild relish, use only 1 hot pepper and omit the black pepper. NOTE: Get a book on canning if unsure about sealing and processing.
