Chile-Pear Relish
Ingredients:
- 2-1/2 lbs Fresh pears; peeled, coredand sliced
- 1 cup Brown sugar; firmly packed
- 3/4 cup Cider vinegar
- 5 Tbsp Chpped onion
- 1 tsp Salt
- 1 tsp Chile powder
- 1/4 tsp Cumin
- 2 Tbsp Chpoped pimiento
- 4 Tbsp Chopped green anaheim chiles
- 1 Serrano chile; seeded & finely chopped
Preparation:
Place all ingredients in a heavy saucepan; stir to blend. Cover and cook the mixture over low heat for 30 minutes, adding an additional 1/4 cup water if necessary.
Uncover and continue cooking for about 25 minutes or just until the mixture is thickend, stirring frequently.
