Chocolate Garnishes

Ingredients:

  • 3 oz. chocolate couverture

Preparation:

Temper chocolate according to manufacturer's instructions. Pour most onto marble slab; let cool.

Place remaining melted chocolate in pastry bag with size 0 tip; pipe desired ornaments onto parchment. Let set at room temperature. Scrape chocolate on marble slab to form shavings or scrolls.
