Apple Pecan Muffins
Ingredients:
- 1 1/4 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 lg. egg
- 1 Tbsp fresh lemon juice
- 1 1/2 tsp vanilla extract
- 3/4 tsp grated lemon zest
- 2 cup coarsely grated, peeled Granny Smith apples
- 1/2 cup chopped, toasted pecans
Preparation:
Preheat oven to 350° F. Grease 1/2 cup sized muffin tin. Sift all-purpose flour, baking soda, ground cinnamon, and salTbsp Combine sugar, oil, egg, lemon juice, vanilla, and lemon zest in a large bowl; whisk to combine.
Mix dry ingredients and sugar mixture. Add apples and pecans. Spoon 1/3 cup batter into each muffin cup. Bake for 35 minutes. Cool slightly on rack. Serve warm.
