Cajun Pastry
Ingredients:
- 1 cup Rice
- 1/2 cup Chopped onion
- 2/3 cup Chopped red bell peppers
- 2 Cloves garlic; minced
- 1 cup Chopped celery
- 1/4 cup Chopped parsley
- 2 oz. Pimientos; drained
- 1/4 cup Margarine
- 1-1/2 tsp Seasoned salt
- 1/2 tsp Red pepper
- 10-3/4 oz. Cream of mushroom soup; low fat
- 1 cup Cooked crabmeat
- 1 cup Cooked shrimp
- 8 sm Pie shells
Preparation:
Cook rice according to package directions. Preheat oven to 400F. In a medium skillet, sauté next 7 ingredients. Add seasonings and mix until blended. Add soup and stir well.
Add crabmeat, shrimp and cooked rice. Stir to combine. Place 1/3 to 1/2 cup of mixture into each pie shell. Bake at 400° F. for 20 minutes.
