Cheese Filling for Danish Pastry

Ingredients:

  • 2 lbs Baker s or pot cheese
  • 8 oz Sugar
  • 3 Eggs
  • 1 Tbsp Grated lemon zest
  • 4 oz Raisins (optional)

Preparation:

Rub the cheese through a sieve.

Using the paddle attachment, cream the cheese and sugar until smooth. Add eggs and lemon zest and mix in. If desired, add in the raisins.
