Cheese Filling for Danish Pastry
Ingredients:
- 2 lbs Baker s or pot cheese
- 8 oz Sugar
- 3 Eggs
- 1 Tbsp Grated lemon zest
- 4 oz Raisins (optional)
Preparation:
Rub the cheese through a sieve.
Using the paddle attachment, cream the cheese and sugar until smooth. Add eggs and lemon zest and mix in. If desired, add in the raisins.
