Golden Corn Relish
Ingredients:
- 2 qt. cut corn, (about 16 med ears)
- 1 quart cabbage, chopped, about 1 sm head
- 1 1/4 cup onion, chopped
- 1 cup green pepper, chopped
- 1 cup sweet red pepper, chopped
- 1 cup celery chopped
- 4 cup vinegar
- 1 1/2 cup sugar
- 1 cup water
- 2 Tbsp mustard seeds
- 1 Tbsp salt
- 1 Tbsp ground turmeric
- 1 tsp celery seed
Preparation:
In a large kettle, combine all ingredients. Simmer, uncovered, for 20 minutes, stirring occasionally. Ladle hot relish into hot jars, leaving 1/4-inch head space.
Adjust caps. Process for 15 minutes in a boiling-water bath.
