Franklin's Homewood Gourmet Roast Pork Loin with Ginger Peach Chutney

  • 1 center cut pork loin
  • Seasoning mix of salt, pepper, Mrs. Dash (to taste)
  • Ginger Peach Chutney (recipe below) image placeholder

Clean the silver skin and or fat that is usually on the loin. Season with the seasoning mix. Roast in a hot oven (425°s; F) for 15 minutes, turn down oven to 375° F and roast for 20 minutes more, until the internal temperature is 140° F.

Allow to rest for 10 minutes before slicing, if serving warm, allow to cool and refrigerate if serving warm. Serve garnished with the ginger peach chutney.

Ginger Peach Chutney Ingredients:
  • 2 peaches, peeled and diced
  • 3 Tbsp onion, diced finely
  • 3 Tbsp red bell pepper, diced finely
  • 2 green onions, sliced
  • 2 Tbsp pickled ginger, diced
  • 3 Tbsp granulated sugar
  • 3 Tbsp rice vinegar image placeholder

Mix all ingredients and allow to marinate overnight in the refrigerator. The chutney can be made spicy with the addition of either sauce or jalapeños.
