Pinon Grill Roasted Potatoes

Ingredients:
  • 8 oz fingerling potatoes (quartered red skin potatoes can be substituted), thoroughly scrubbed
  • 1 tsp garlic, minced fine
  • Kosher salt
  • Freshly ground black pepper
  • 4 tsp olive oil

Preparation:

Combine all ingredients in large bowl and toss to coat (use ample salt and pepper to season). Spread contents of bowl out on baking sheet and bake at 275°s; F (any hotter will burn garlic) for 25 to 30 minutes or until soft.
