Fancy Beans With Rice
Ingredients:
- 1-2 cloves garlic, minced
- 1 onion, chopped
- 1 Tbsp vegetable oil
- 1 zucchini, chopped
- 2 fresh tomatoes, chopped
- 1/2 tsp oregano
- 1 can - 15 oz. beans, any type, drained and rinsed
- 3 cup cooked rice
Preparation:
Heat oil in a pan and cook garlic and onions until soft, about 2 minutes. Add zucchini, tomatoes and oregano. Cover and let simmer about 5 minutes, until vegetables are soft.
Add beans and cook for another couple of minutes to heat beans thoroughly. Pepper and/or salt may be added, if desired. Spoon over hot rice.
