Avocado Salsa With Orange

Ingredients:

  • 1 jalapeño pepper, finely chopped
  • 1 shallot, finely chopped
  • 2 ripe avocados
  • juice of one lime
  • juice of 1/2 lemon
  • juice of 1/2 orange
  • 1 clove garlic, minced
  • 1/4 cup fresh chopped cilantro
  • salt to taste

Preparation:

Toast the jalapeño and onion in a non-stick skillet. After they are toasted, put into a blender with avocados, lime juice, lemon juice, orange juice, garlic, cilantro and salt. Blend well.

Chill at least 2 hours before serving. Can be served as a dip with tortilla chips or used as a topping for fajitas.
