Baked Fish with Bacon Stuffing
Ingredients:
- 3 cup Soft bread crumbs
- 1 Tbsp Bacon drippings
- 1/4 cup Onion; finely chopped
- 1/4 cup Diced bacon; cooked
- 2 Tbsp Lemon juice
- 2 Tbsp Water
- Seasonings
- 2 lbs Dressed fish
- Soft butter or margarine
- Lemon wedges
Preparation:
Mix together all ingredients except fish, butter and lemon. Place stuffing lightly in cavity of fish; do not skewer. Place in greased baking pan; spread with butter. Bake in a 400° F oven for 40 minutes or until fish flakes easily.
Baste occasionally. Serve with lemon wedges.
