Baked Lemon Fish

Ingredients:

  • 1-1/2 lbs Fish fillets (sole; flounder)
  • 2 Tbsp Fresh parsley; chopped
  • 1 Lemon (6 wedges)
  • 1 Tbsp Oil
  • Salt and fresh ground pepper-or lemon pepper; to taste
  • 1 Tbsp Lemon juice

Preparation:

In bottom of shallow baking or broiling pan, spread oil,lemon juice, and pepper. Swish fish around in pan, coating both sides. Sprinkle with parsley. Broil 3-4 minutes on each side or until edges are browned.

Serve with lemon wedges and sprinkle with salt or additional lemon pepper.
