Italian Corn Crusted Baked Fish
Ingredients:
- 2 cup Chopped tomatoes
- 2 Tbsp Minced garlic
- 1/4 cup Olive oil
- 1 Tbsp Thyme or oregano
- 1 lbs Haddock, sole or cod
- Grated Parmesan cheese
- 1/2 cup Yellow cornmeal mixed with
- Salt and pepper (1/2 tsp. ea)
Preparation:
Mix tomatoes, garlic, oil and thyme in bottom of baking dish. Dip fish in cornmeal and place in dish. Bake at 450° F for 20-26 minutes. Top with cheese.
